I am going to share with you a recipe for, which is a Thai dish that is served at street vendors. There are many different dishes in Thailand but this one is my favorite because it has an amazing combination of flavors and textures. It is made up of rice noodles that have been stir fried with red curry paste, soy sauce, oyster sauce, brown sugar and cilantro. This dish also contains garlic chives or spring onions as well as ground pork or chicken. You can choose either according to your preference! The best part about the dish though has got to be the toppings: crushed peanuts and crispy deep-fried shallots on top just give it such an amazing crunch!
To really make the dish come together, I would recommend making your own red curry paste rather than purchasing it from a store. It is very simple to make and will save you money! However if you are pressed for time then store-bought works just fine too.

- 500g Pork or Chicken (sliced thinly)
- 2 cups Vegetable Oil for Frying (Canola preferred)
- Panang Curry Paste – 3 tbsp (Can be found at Asian grocery stores)
- 2 tbsp Brown Sugar (Note: adjust according to taste if you like it sweeter)
- 1 tbsp Soy Sauce (I recommend Kikkoman as a brand)
- 1/2 tbsp Oyster Sauce (Available in the oriental section of most supermarkets. I prefer Thai Oyster sauce though)
- 2 cups Bean Sprouts
- 5 cloves Garlic (chopped roughly)
- 1 tbsp Crushed Peanuts (plus more for decoration)
- 1/2 cup Crispy Shallots (Can be found at most Asian grocery stores.

Prepare Panang Curry Paste
The first ingredient that we will be using is the Panang Curry Paste, which tastes really good with basil and chili peppers. It can be found at Asian grocery stores either fresh or frozen. Make sure you thaw it out before cooking!

Prepare the Vegetables and Meat
The next step is to prepare the vegetables! Take a generous pinch of ground pork and roll it between your palms. This will create a nice round shape for the meatballs later on in the recipe. Make sure that each meatball is about 1-inch in diameter.
The third and most important ingredient is oyster sauce. If you do not have oyster sauce, then it can substitute with soy sauce. It might just change the flavor ever so slightly but I believe that would still taste very good! Stir-fry it for a few seconds before adding the rest of your ingredients. It can serve with rice or noodles for an authentic Thai experience!
